I’m so over the cold and gloomy weather. I’m ready for sunshine!

Are you looking for a warm and comforting recipe to get you through another cold day? I’ve got a great one! This recipe for Southwestern Chicken Egg Roll Wraps is perfect for gloomy winter days. It’s a family favorite in our house – not too spicy, but packed with flavor. It’s an old Southern Living recipe (so you know it’s good) that’s been perfected over the years by my sweet friend Lauren, who’s given me permission to share it with you guys. Thanks Lauren!

I used my Instant-Pot to cook the chicken, but you can make this recipe even easier by using cooked rotisserie chicken. (If you do use rotisserie chicken, make sure to add a little water to the sauce since you won’t be rendering any juice from cooking the chicken.)

It all began with a couple of bottles of dried up paint.

My kids had been asking to paint for weeks. Each time I inwardly groaned, and cleverly redirected them to another less-messy activity. Because I really hate letting my kids paint. It always starts out fine – they innocently dip their paint brushes, mixing a few colors here and there, giggling and telling me all about the “masterpieces” they’re painting. But after about 10 minutes, it all starts to go downhill – fast! Someone starts mixing all the colors together, someone squeezes out almost an entire bottle of paint, someone starts painting her hand, face, or foot, someone starts smearing huge globs of paint all over the table… When we’re done, my kitchen looks like a rainbow exploded and I swear to myself that I’m never letting the kids paint again!

But last week, I caved. My little artists had asked so many times to paint, and I knew I couldn’t hold out any longer. I opened up the storage box where we keep the painting supplies and (to my secret delight) all the paint was completely dried up. “Oh well! Guess we can’t paint today.”

My kids were heartbroken. My little one cried. Que the mommy-guilt…

Favorite Place I Went This Month

Well, I’ve kind of been a hermit since I’m doing Whole 30 and I’ve been terrified of getting the flu. So we haven’t been to too many cool places. We did take the kids to the Decatur Toy Park this past weekend. And after being stuck inside because of all the snow the week before, it was so nice to get out! We had lunch at Taco Mac, grabbed some tea and coffee from Dancing Goats, and enjoyed spending time outdoors in the sun. It was such a nice family outing.

I’m doing Whole 30 this month, along with everyone else in the world it seems! Whole 30 is blowing up my Facebook, Pinterest and Instagram. I’m amazed at how many people can stick with such a super restrictive diet.

But here I am, 11 days in, actually sticking to it myself.

Crazy.

I do miss pasta.

And coffee creamer.

And anything and everything sweet.

But I feel like since I’m already 11 days deep, I might as well push through and finish this thing!

Christmas Home Tour

Last weekend, I had some girlfriends over for our annual gift exchange. And, like I always do, I cleaned like a mad woman for HOURS before everyone arrived. (Please tell me I’m not the only one who does this!)

I figured I should take advantage of my house being so clean and take some pictures of our Christmas decor for the old blog. I didn’t decorate as much as I’ve done in the past since we’ve been so busy this year, but I’m happy with how the few things I did decorate turned out.
