There’s nothing better than eating good food with good friends, am I right? Before kids, Josh and I were always entertaining! We loved throwing dinner parties, cocktail hours, and seasonal parties. One year, my best friend Lauren and I threw an epic scary movie night for Halloween. These days, I mostly just host play dates and small groups from church. I don’t know about you, but I hate packing lunches! We all want our kids to be eating a balanced diet, but constantly coming up with new, healthy, and exciting lunches is no easy feat. In fact, Frodo’s march on Mordor was probably a more desirable challenge. Ha! It isn’t just because our imagination is lacking or time is short, but also because most of us can’t imagine our kids would be happy to open up a lunch box full of edamame beans, kale, and spinach.

To me, comfort food is a big bowl of pasta. It speaks to me all about love, home, family, laughter, warmth, and togetherness. The twirl of a fork, the sprinkle of parmesan, the slurp of a noodle – it doesn’t get much better than that!

One of my favorite sauces is a hearty, warm, meaty bowl of bolognese. My recipe is slightly sweet from the caramelized onions, but still savory and filling. The herbs give the recipe depth, and I love how the chunky diced vegetables give the sauce great texture.

My caramelized onion bolognese is perfect over a larger pasta, like linguine, pappardelle, or tagliatelle. But it’s great with spaghetti noodles too, and that’s what we usually have in our pantry. You could also pile it on top of polenta. I’ve also been known to eat it plain out of a bowl, like chili. It’s that good!

Quick and Easy 4th of July Cookie Pizza

We’ve been making cookie pizza for years. I remember making one to share with my classmates back in college and it was a huge hit! And while there are tons of different recipes for cookie pizza on Pinterest, my quick and easy 4th of July cookie pizza is great because it starts with a pouch of store-bought sugar cookie mix. It’s also a super versatile recipe – you can customize it for any holiday. A heart pizza for Valentine’s Day, a Christmas tree for Christmas, a margarita shaped pizza for World Margarita Day. Ha! (It’s in February FYI.) The possibilities are endless!

My kids absolutely love making fruit pizza. They like spreading the frosting, placing the fruit, and drizzling the topping. And the fruit totally makes this a healthy recipe, right?

My quick and easy 4th of July cookie pizza is a perfect dessert to take to a 4th of July potluck or barbecue. Just wait and arrange the fruit and drizzle the marmalade at the last minute. It doesn’t keep well (it starts to get mushy) so make sure you eat all of it in one sitting. Which isn’t hard for my family to do!
