My favorite season is autumn. The weather is perfect, there are so many fun outdoor activities going on, and so many opportunities to spend time with friends and family. And of course, there’s tons of amazing fall food! From soups, to pies, to warm crock-pot meals, autumn is definitely all about delicious comfort food.

One of my favorite fall comfort foods is apple pie. Apples are amazing in autumn – they’re at their peak of flavor, and they imitate the autumn weather – crisp and sweet. This autumn, here in Atlanta, a new variety of apples is headed our way. Autumn Glory apples are rich with the fall flavors of sweet caramel and warm cinnamon. They’re perfect for snacking, slicing for a cheese platter, or baking in a warm apple pie. My kids love them too, and while they usually only take a few bites of an apple and leave the rest sitting on the counter, they gobble up entire Autumn Glory apples!

Whole Wheat Apple Cinnamon Muffins with Caramel Butter

Ok – I’m going to let you guys in on a little secret…I’m not the best baker. I can cook pretty well. But baking? Not my forte. Too much exact science, measuring, and worrying about altitude and weather. That’s all way too complicated for this #lazymom! But since I’ve had kids, I’ve had lots of practice making muffins. For some reason, muffins aren’t as intimidating to me. And my kid’s absolutely love muffins, so we try to make them at least once a week. Muffins are also the perfect snack to bring to playdates, or send in to a preschool bake sale. These whole wheat apple cinnamon muffins with caramel butter are a fall favorite in our house, and we can pretend they’re healthy since they include whole wheat flour, ground flax, and apples!

Quick and Easy 4th of July Cookie Pizza

We’ve been making cookie pizza for years. I remember making one to share with my classmates back in college and it was a huge hit! And while there are tons of different recipes for cookie pizza on Pinterest, my quick and easy 4th of July cookie pizza is great because it starts with a pouch of store-bought sugar cookie mix. It’s also a super versatile recipe – you can customize it for any holiday. A heart pizza for Valentine’s Day, a Christmas tree for Christmas, a margarita shaped pizza for World Margarita Day. Ha! (It’s in February FYI.) The possibilities are endless!

My kids absolutely love making fruit pizza. They like spreading the frosting, placing the fruit, and drizzling the topping. And the fruit totally makes this a healthy recipe, right?

My quick and easy 4th of July cookie pizza is a perfect dessert to take to a 4th of July potluck or barbecue. Just wait and arrange the fruit and drizzle the marmalade at the last minute. It doesn’t keep well (it starts to get mushy) so make sure you eat all of it in one sitting. Which isn’t hard for my family to do!

Orecchiette with Peas, Pancetta, and Parmesan

I know, I know – there are probably a million recipes on Pinterest for orecchiette with peas, pancetta, and parmesan. But my recipe is made with all pantry and freezer ingredients, so it’s a super easy meal to throw together on nights when you just don’t want to adult anymore. Or those days when you don’t feel like taking two kids to the grocery store.

It’s also kid approved! (Although, be warned, your kids may end up putting the orecchiette on their fingers like little hats while they sing “Sister finger, sister finger, where are you?” And then that song will be stuck in your head for eternity…) I also may or may not have showed Graham and Maddie how to stack two orecchiette on top of each other with a pea and some pancetta inside to make a “pasta sandwich.” We play with food sometimes in our house. Don’t judge.

Anyway, if you’re looking for a simply pantry meal, check out my recipe. I keep these small packages of pancetta in my freezer along with a block of parm and a bag of peas. They all freeze well, and, get this – you don’t even have to defrost them before you start cooking!
