My mother-in-law makes the BEST coconut cake, hands down.

Every year I request this cake for my birthday and it’s amazing. Light and fluffy, but also creamy and coco-nutty. Perfectly sweet, but not too sweet. And the frosting is dreamy. It’s the BEST!

Want her recipe? Too bad! She’s taking it to her grave. I’m serious! She won’t share it! She’s such a giving woman. She’d give you the shirt off of her back if you were in need. But this recipe? Nope. Maybe if you call her and offer her money, she might reveal her secrets. But good luck. I gave her two perfect grandchildren and she won’t share it with me. So until that recipe is set free, this one will have to do.

I used a few fresh sprigs of rosemary and sweet balsamic vinegar in the marinade for the yummy steak I cooked last night.

The smell of rosemary always reminds me of our first baby – our dog Lacey. She loved to chase birds and squirrels and would take off running like lightening if she heard the slightest little cheep or twitter. She was also a great jumper. My Grandma used to say Lacey had a “spring in her butt!” She was constantly running through the rosemary bush at my parent’s house and her fur always smelled like piney rosemary.

I’m sure Lacey would’ve loved this steak. Or maybe some rosemary flavored dog food!

Here’s one of my favorite recipes to make when the weather finally starts to get warm – Spring Pasta!

There’s something about the changing of the seasons that always inspires me to cook. In the fall, I want to make chili and any pumpkin flavored recipe I can get my hands on. Wintertime is all about comfort foods: soups and casseroles and warm drinks. In the summer, I want easy, no-cook recipes so I don’t have to turn on the stove or oven when it’s 99 degrees in the house. And in the spring, it’s all about the vegetables, and this veggie packed Spring Pasta.
