Celebrate the luck of the Irish with these fun St. Patrick’s Day cupcakes!
The kiddos and I made some surprise inside St. Patrick’s Day cupcakes yesterday afternoon, inspired by this Betty Crocker recipe. We’re only allowed to bake on school nights so that Josh can take the leftovers to work with him the next day. If we have 24 cupcakes sitting around the house over the weekend…well…there will only be one or two left by Monday. My sugar addiction is REAL man!
I went the easy route with boxed cake mix and canned frosting. Can’t go wrong with Funfetti, right guys? It’s just so…FUN!
After following the directions on the box of cake mix, we popped the cupcake pans into the oven and I mentally prepped myself for the whining. I don’t know about your kids, but mine haven’t grasped the concept of waiting for things to bake and cool…
468 million hours later (according to Graham) the cupcakes were finally cool enough to handle. We cut a chunk out of each cupcake, filled them with some Lucky Charms marshmallows, smashed the tops back on, and then slapped some frosting on top. We happened to have some shamrock sprinkles, but you could use more marshmallows instead for the topping and I think that’d be cute too!
They were pretty tasty, although I think I’d prefer mine without the marshmallows. I’m old school like that.
