Quick and Easy Christmas Appetizer – Hummus with Tomato and Cucumber Salad
This recipe is so simple and takes minutes to throw together. I love how festive the colors are – it’s perfect for Christmas with all the red and green! I also love that it’s a light dish. So many meals this time of year are hearty and heavy, so it’s nice to have something light and fresh.
You can serve this dip with pita chips or crackers. I found these adorable snowflake crackers at Kroger. So cute!
The ingredients are simple. All you need is half a cucumber, some grape tomatoes, hummus, parsley, red wine vinegar, extra virgin olive oil, and salt and pepper.
First, chop up the veggies.
Add them all to a bowl and drizzle with olive oil and vinegar. Sprinkle with salt and pepper and let the mixture marinate for at least 10 minutes.
Spread the hummus on a serving platter.
Top with the veggies and then arrange the crackers or pita chips around the dip.
If you’re planning on taking this to a holiday party, put the marinated veggies in a plastic container and store in the fridge until time to leave. When you’re ready to go, pack a bag with the container of veggies, the container of hummus, a serving platter, and the box of crackers. It’s super easy to throw it all together when you get to the party!

Ingredients
- 1 family-sized container of plain hummus
- 1/2 English cucumber, chopped
- 1/2 cup of tomatoes, chopped
- 2 tablespoons of parsley, chopped
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- salt and pepper to taste
Instructions
- In a bowl, mix together the cucumber, tomatoes, parsley, olive oil, and vinegar. Sprinkle with salt and pepper and stir.
- Let the cucumbers and tomatoes marinate for at least 10 minutes.
- Spread the hummus around a serving platter.
- Using a slotted spoon, scoop the cucumber and tomato mixture on top of the hummus.
- Serve with pita chips or crackers.
