Strawberry cake is my husband’s favorite cake. And while my mother-in-law makes the best strawberry cake, I think mine is a close second. It starts with a box of cake mix (which makes baking a cake less intimidating to me) and ends with a pretty pale pink cream cheese frosting that you’ll want to eat right out of the bowl!

My kids also love this cake. Strawberries are one of Graham’s favorite fruits, and Maddie’s favorite color is “princess pink” so she loves the cake too.

Ingredients

  • 4 egg whites
  • 1 package white cake mix
  • 4 ounces box of strawberry jello
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 1/4 cup pureed strawberries
  • 1/4 cup strawberry jam
  • 8 ounces of softened cream cheese
  • 1/4 cup of softened butter
  • 1/2 cup of mashed strawberries
  • 2 cups of powdered sugar

Instructions

  1. In the bowl of a stand mixer (or in a large bowl with a hand mixer), beat the 4 eggwhites on high speed until stiff peaks form. Transfer to another bowl and set aside.
  2. Next, in the bowl of your mixer, combine the cake mix, jello, water and oil. Beat on low until dry ingredients are moistened, and then beat on medium for 3 minutes.
  3. Fold the egg whites and the mashed strawberries into the cake batter.
  4. Pour into 3 greased and floured 8 inch round baking pans.
  5. Bake at 350 degrees for 25-30 minutes. (A toothpick insearted should come out clean.)
  6. Cool cakes for 10 minutes.
  7. Removed each cake and cool completely on wire racks.
  8. While cake is cooling, make the frosting.
  9. Cream together the softened butter and cream cheese in the bowl of your mixer.
  10. Beat in the pureed strawberries.
  11. Add the powerded sugar, about a 1/2 cup at a time to the mixer until the frosting comes to the desired thickness.
  12. Set the first cake on your cake plate. Spread a couple of tablespoons of strawberry jam on the cake.
  13. Carefully place the next cake on top of the jam.
  14. Spread a couple more tablespoons of jam on the cake.
  15. Top with the last cake.
  16. Frost with the cream cheese frosting.
  17. Decorate with fresh strawberries, slice, and enjoy!
  18. Refrigerate any leftovers.
